Low-Carb Strawberry Dessert
Depending on where you live, strawberries will start to grow as early as February (in Florida) or as late as June (farther north). That makes any strawberry dessert perfect for spring and summer.
When I make strawberry desserts in the summer, I try not to use my oven if I can help it. I don’t need my oven to heat up my kitchen!
These no-bake cheesecake bites are creamy, sweet, and remind me of my favorite fruity cheesecake!
No-Bake Strawberry Cheesecake Bars
If you have kids that have a sweet tooth, this is a healthy treat that you’ll feel good letting them eat. In fact, if they love strawberries, you might want to double this recipe.
It’s packed with nutrients. The coconut flour has healthy fats in it, and the heavy cream and cream cheese are excellent sources of calcium. Beware, this is a dairy-heavy recipe. If someone can’t eat dairy, they probably shouldn’t eat this recipe.
To encourage healthy portion control, I cut the bars into smaller bites. Even though they are low-carb, they still have carbs and eating too many could upset your macros for the day.
Low-Carb Cheesecake Topping
I didn’t really use a cheesecake topping for these bars. Instead, I sliced some fresh strawberries and used them as a garnish. I love how the sweet strawberries taste with the creamy and rich cheesecake.
There are lots of other low-carb cheesecake topping ideas you can use. Instead of strawberries, top it with some sugar-free chocolate chips or drizzle it with some sugar-free caramel syrup and sprinkle it with sea salt.
You can also use different fruit on top. Try it with kiwi, blueberries, or raspberries.
Keto-Friendly Cheesecake Bars
This is a pretty versatile recipe. I cut it into bars – which is perfect for snacks or even parties. You could also just place the crust into a round pan and make a regular cheesecake.
Or, place the ingredients into individual ramekins. Then, you’ll have mini cheesecakes for each person in the family or to serve at parties.
You could also just leave out a bowl of sliced fruit and allow people to top the cheesecake with their favorite toppings.
How To Store No-Bake Cheesecake
These bars will only last about 3 days in the refrigerator. Store them in an airtight container. After about 3 days, the cheesecake will make the crust softer, so it won’t be as appetizing.

CRUST:
Coconut flour
Coconut oil
Sugar free maple syrup
Butter
Powdered sugar alternative
CHEESECAKE LAYER:
Cream cheese
Heavy cream
Sour cream
Powdered sugar alternative
Vanilla extract
Strawberries
INSTRUCTIONS:
In a bowl, whisk together coconut flour and powdered sugar alternative.
In a separate bowl, heat butter, maple syrup and coconut oil in the microwave. (I did 20 second intervals).
Mix melted ingredients with coconut flour, until you have a crumbly dough.
Press dough into a parchment (or foil) lined pan. (I used a loaf pan to create thicker bars). Set aside for now.
In a large bowl, combine all ingredients for the cheesecake layer (minus strawberries). Using a hand mixer or stand mixer, mix everything together until creamy and fluffy.
Pour batter over the crust. Top with sliced strawberries.
Place in the refrigerator for approximately 8-12 hours.
Remove and slice when you are ready to serve.
