Ingredients

  • 1 1/2 pounds Chicken Thigh boneless, skinless
  • 2 tbsp Olive Oil
  • pinch Cayenne Pepper
  • 1/2 cup Soy Sauce
  • 5 tbsp Distilled White Vinegar
  • 1/2 Medium Onion Sliced
  • 2 tbsp Swerve Brown Sugar Substitute
  • 4 tsp Minced Garlic

Garnish

  • Fresh Parsley

Instructions

  1. Heat the oil in the Instant Pot on the saute setting.

  2. Season the chicken thighs with salt and pepper to taste as well as a dash of cayenne pepper.

  3. Add the chicken to the heated oil and brown on both sides.

  4. Turn the heat off, add the remaining ingredients into the Instant Pot with the chicken, and close the lid, setting it to “sealing.”

  5. Place the Instant Pot to cook on manual for 10 minutes. Once complete, perform a quick release, set the Instant Pot to saute, and cook another 15 minutes before serving.
