What Is Adobo Chicken
Adobo chicken is a recipe from the Philipines. It has a caramelized sauce that packs some heat and unmistakable umami flavor. It’s the perfect recipe to make when you are craving sweets, salty, and savory flavors all at the same time.
Traditionally, adobo chicken is made by marinating the chicken and then frying it in garlic, onion, and brown sugar. I altered the recipe to save time and make it something the entire family will love, whether they are on the keto diet or not.
Keto Chicken Adobo
I used Swerve brown sugar substitute to give this chicken the traditional sweet taste. Brown sugar substitute also caramelizes better than a liquid or granular sweetener, so I suggest sticking with it.
Chicken adobo is traditionally made with chicken thighs. My recipe can easily be altered to use drumsticks or even chicken wings or breasts. If you use chicken breasts or wings, you will need to adjust the cooking time. It doesn’t take as long to cook chicken breasts as it does to cook chicken thighs.
Try this recipe with pork loin. It will shred really well in the Instant Pot and have all the irresistible flavors. I love it with pork.
What To Serve with Instant Pot Chicken Adobo
Since this is an Asian recipe, I suggest serving this chicken with some fried cauliflower rice. Fill that cauliflower fried rice with your favorite vegetables and you have a filling and complete meal. You can also add some keto egg drop soup to the table. It’s a light and delicious soup that compliments the tastes of the chicken.
Chicken Adobo Instant Pot
I love using this in my meal prep. I usually shred the cooked adobo chicken and store it in my meal prep containers. It will stay fresh in the refrigerator for up to 5 days.
Then, you can just use this on top of some leftover cauliflower fried rice for a quick lunch. You can also use this chicken on top of your favorite chopped salad or some keto miso ramen soup.
I made this in the Instant Pot because I adore how the pressure cooker infuses every single bite of chicken with the adobo flavors. You don’t have to marinate it when you use the Instant Pot!
You can also make this in a slow cooker or roast it in the oven. To make it in the slow cooker, just place all the ingredients in your slow cooker and let it cook on low for 6-8 hours or on high for 4-6 hours.
If you want to make it in the oven, I suggest marinating it overnight first. Then, bake it uncovered at 375 degrees F for about 45 minutes.
Chicken Adobo Marinade
I did not marinate the chicken before cooking it in the Instant Pot – but you definitely can if you have the time. Just make a separate container using the same ingredients as my sauce. Let the chicken thighs set in this marinade for a few hours or as long as overnight.

Instructions:
Heat the oil in the Instant Pot on the saute setting.
Season the chicken thighs with salt and pepper to taste as well as a dash of cayenne pepper.
Add the chicken to the heated oil and brown on both sides.
Turn the heat off, add the remaining ingredients into the Instant Pot with the chicken, and close the lid, setting it to “sealing.”
Place the Instant Pot to cook on manual for 10 minutes. Once complete, perform a quick release, set the Instant Pot to saute, and cook another 15 minutes before serving.
