Keto Loaded Cauliflower With Ranch

Ingredients

  • 8 slices Bacon cooked and chopped
  • 2 heads Cauliflower cut into bite-sized pieces
  • 1 tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • 1/3 cup Shredded Sharp Cheddar Cheese
  • 4 Green Onions
  • 1/3 cup Ranch Dressing

Instructions

  1. In a skillet or your oven, cook the bacon until crisp. Remove the bacon and place on a paper towel-lined plate. Save 1/4 cup of bacon grease.

  2. Preheat oven to 425°F. Prepare a baking sheet by lining it with parchment paper.

  3. In a large bowl add in the cauliflower, garlic powder, black pepper and bacon grease. Stir to combine and coat the cauliflower.

  4. Spread the cauliflower onto the baking sheet and then bake for 20-22 minutes using a spatula to flip the cauliflower about halfway through.

  5. After the cauliflower has cooked, remove from the oven and sprinkle the cheddar cheese on top and cook for an additional 2-3 minutes.

  6. Remove the cauliflower from the oven and top with the chopped bacon bits and sliced green onions, top it drizzled ranch dressing. Enjoy!
