Roasted Cauliflower With Ranch

I am so glad dry ranch seasoning packets are keto-friendly. They make cooking fun and delicious! When you roast cauliflower, you are bringing out the sweeter flavors. Plus, the cauliflower becomes crispy on the outside and nice and soft on the inside.
Then all the amazing toppings elevate it even more. This is one of my favorite recipes to use in my meal prep. Store it in an airtight container and it will last about 3 days. Then, just reheat it and the cheese will melt again, covering the cauliflower in gooey goodness!
Loaded Cauliflower
This loaded cauliflower is so filling that you can eat it for lunch. If you want to give it a bit more protein, just add some canned or rotisserie chicken. This is a high-fat, low-carb, delicious side dish.
It’s also extremely versatile. Add some broccoli or mushrooms (or any of your favorite vegetables). If you enjoy spicy foods, top it with sliced jalapenos and add as much hot sauce as you can stand.
Keto Loaded Cauliflower
I just love finding new ways to cook and eat cauliflower. This recipe was kind of inspired by my cauliflower potato salad. That salad is a cold one, so I decided to change it up and roast the cauliflower.
The result tastes and looks like loaded baked potatoes! I used shredded sharp cheddar cheese because it is easy to find and melts beautifully.
If you want to change things up, chop up some pepper jack cheese and add it on top.
Easy Roasted Cauliflower
There are a lot of ways that you can change this basic recipe. In fact, if you add some brussel sprouts you will have my low-carb cauliflower and brussel sprouts recipe. It’s very similar, not exactly the same. But that’s the fun thing about cooking!

This keto loaded cauliflower recipe goes with almost anything you make. I like to eat it with some keto popcorn chicken. Since loaded potatoes often accompany steak, serve this with your favorite skillet steak recipe too.

Keto Loaded Cauliflower With Ranch And Cheese Recipe
Here’s the list of ingredients that you’ll need to make this keto loaded cauliflower side. Exact measurements and instructions are located just a little bit further below.
Serves: 4-5 as a side dish serving
Ingredients:
Bacon
Cauliflower
Garlic powder
Black pepper
Sharp cheddar cheese
Green onions
Ranch dressing
Salt to taste
Instructions:
1. In a skillet or your oven, cook the bacon until crisp. Remove the and place on a paper towel lined plate. Save 1/4 cup of bacon grease.
2. Preheat oven to 425°F. Prepare a baking sheet with by lining it with parchment paper.
3. In a large bowl add in the cauliflower, garlic powder, black pepper and bacon grease. Stir to combine and coat the cauliflower.
4. Spread the cauliflower onto the baking sheet and then bake for 20-22 minutes using a spatula to flip the cauliflower about halfway through.
5. After the cauliflower has cooked, remove from the oven and sprinkle the cheddar cheese on top and cook for an additional 2-3 minutes.
6. Remove the cauliflower from the oven and top with the chopped bacon bits and sliced green onions, top it drizzled ranch dressing. Enjoy!

- 2 heads Cauliflower cut into bite-sized pieces
- 1 tsp Garlic Powder
- 1/4 tsp Black Pepper
- 1/3 cup Shredded Sharp Cheddar Cheese
- 4 Green Onions
- 1/3 cup Ranch Dressing
