Ingredients

  • 3 cups Cauliflower Rice
  • 1 cup Cucumber diced
  • 1 cup Cherry Tomatoes halved

Oil and Vinegar Dressing

  • 1 splash Lemon Juice
  • 3 tbsp Olive Oil
  • 1.5 tbsp Red Wine Vinegar
  • ` Parsley for garnish

Instructions

  1. Cook the cauliflower rice to al dente, and then drain very well.

  2. Place the cauliflower rice, cucumber, tomatoes and lemon juice in a bowl, and stir to combine.

  3. In a small bowl, whisk together the oil, vinegar and salt and pepper to taste.

  4. Pour the vinaigrette over the mixture, and toss to combine well.

  5. Garnish with parsley before serving.
