Cucumber and Cauliflower Salad
I’m always looking for new ways to eat both cucumber and cauliflower on the keto diet. They are both super low in carbs, high in fiber, and so good for you. I discovered that cucumbers taste amazing when you sweeten them with strawberries in a cucumber strawberry salad.
They also taste incredible when you mix them with salty peanuts and create a low-carb Thai cucumber salad.
I normally roast, chop, or mash cauliflower. After I made a risotto out of cauliflower rice, I knew I had to make more creative recipes out of riced cauliflower. The small pieces of cauliflower rice add fiber to the recipe without overtaking it with large bites.
Together, cucumber and cauliflower make the freshest and crunchiest salad. You only need a few simple ingredients and lunch is ready!
Cauliflower Salad
When you roast or saute cauliflower, it gives it a nuttier and almost buttery flavor, like in this keto Mexican street cauliflower. This keto cauliflower salad is made with cauliflower rice. You could chop up the cauliflower rice and add the small pieces to the salad without pre-cooking it.
I prefer to add cooked cauliflower rice to the salad because it has a sweet flavor after you cook it.
After you cook the cauliflower rice, use a cheesecloth or some other method to remove as much water from the cauliflower rice as possible. If you leave too much water in the cauliflower rice, it will water down the dressing and give it a less pleasant look.
Oil and Vinegar Dressing
For the dressing, I combined olive oil and red wine vinegar in a 2:1 ratio. Any type of vinegar will work in this recipe. Red wine vinegar is the sweetest kind without adding more carbs. Balsamic vinegar is also sweet.
If you want to use balsamic vinegar, use a white balsamic so it doesn’t turn your cucumbers dark brown. You can even skip making your own dressing and just sprinkle your favorite sugar-free dressing on top.
How To Store Chopped Cucumbers
Chopped cucumbers must be stored in an airtight container in the refrigerator covered in some sort of acidic liquid or else they will dry out. If you store them with the salad dressing they will last about a week in the fridge.
This salad is a fantastic way to use cucumbers from your garden or the Farmer’s market.
How To Make Cauliflower Rice
Save yourself time and just buy a bag of frozen cauliflower rice from the store. After you steam it, remove as much water as you can.
It’s easier to make cauliflower rice at home if you have a food processor. Then, all you have to do is place the cauliflower florets in the food processor and pulse it a few times until it resembles grains of rice.
Cauliflower rice is quite messy, so containing it in the food processor will also help make cleanup faster and easier.
