Ingredients

  • 2 pounds Beef Chuck Roast
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 1 tbsp Ground Cumin
  • 1 tbsp Chili Powder
  • 1 tsp Paprika
  • 1 tsp Oregano
  • 1 cup Beef Broth
  • 2 tbsp Lime Juice
  • Salt and Pepper to taste
  • 12 Low Carb Soft Taco Tortillas

Instructions

  • Start out by seasoning the beef chuck roast with cumin, chili powder, paprika, oregano, salt, and pepper. If you want it to taste spicier, add red pepper flakes.
  • Add the seasoned beef chuck to your slow cooker. On top of the beef, add your chopped onion, minced garlic, and beef broth.
  • Cook everything together on low for 4 hours or until the beef is tender and shreds easily.
  • When you're ready to serve it, shred the beef chuck roast with two forks. Then, mix it together with the juices from the slow cooker.
  • Heat up your tortillas in a pan on the stove or in the microwave. Fill them with your shredded beef and add your favorite toppings.
