Ingredients

  • 1 pounds spinach
  • 2 cups Success® Boil-in-Bag Quinoa
  • 2 pounds mushrooms
  • 1/4 cup olive oil
  • 1 tbsp fresh garlic
  • 1/2 cup red wine vinegar
  • Salt & pepper to taste
  • 1/2 tsp red pepper flakes

Instructions

  • Make Success® Boil-in-Bag Quinoa according to instructions on the packaging and set aside.
  • In a bowl whisk vinegar, olive oil, salt, and pepper.
  • In a skillet add mushrooms and drizzle half the dressing, toss and cook until mushrooms are soft.
  • Turn down heat and top with spinach and quinoa.
  • Stir until spinach is slightly wilted. Add remaining dressing, stir and serve!
  • Top with red pepper flakes for a kick and enjoy!
