EASY CAULIFLOWER CEVICHE TACOS

These easy cauliflower ceviche tacos are a fun and healthy version of tacos! This delicious cauliflower ceviche is a great recipe for Lenet, Taco Tuesday, or light meatless meal!

Ingredients

  • 1 head  Cauliflower cut into florets
  • 1 cup Clamato The Original
  • 1 cup Diced tomato
  • 1 diced Serrano Pepper or jalapenos  remove seeds for less of a kick
  • ½ cup Diced white onion 
  • ½ cup ReaLime
  • ½ cup ReaLemon
  • 1 tbsp Cilantro
  • 2 tbsp Worcestershire sauce
  •  tsp Cayenne pepper
  • 2 Avocados
  • 6 Taco shells or soft tortillas Salt

Instructions

  1. In a large pot, boil salted water on high. Boil cauliflower for 3-4 minutes

  3. Chop cauliflower into florets

  4. In a bowl add tomato, onion, Serrano pepper, cilantro, lemon, and lime juice,worchestersire sauce, and cayenne pepper. Place in the fridge to marinate for 15-20 minutes

  5. Toss in cauliflower and mix well. Season with salt and pepper

  6. Serve on taco shells and top with more cilantro, avocado, and queso fresco! All these ingredients can easily be found at Walmart!
