Cauliflower Ceviche Tacos
Ceviche has always been a go-to for Lent. My mom always made her traditional shrimp ceviche, and one of the main ingredients was often Clamato® Tomato Cocktail (click here) to see the selection of flavors). We always had Clamato at home to use in many salads and drinks!

Lent is a time for the family to spend together, and growing up all the primos and primas got dressed in their best outfits! Most of our gatherings always ended with everyone bailando salsa and laughing all night long! There wasn’t anything too fancy about our gatherings, but we had the three main things we all loved: family, food, and music!
Now, as a mom myself, I’ve given those classic recipes I grew up on my own twist. This year, I decided to make a cauliflower ceviche tacos! Isn’t it amazing how many ways you can actually use cauliflower?
I buy my cauliflower in bulk at Walmart. With prices that low its easy for me to stock up for Lent or those busy weeknight dinners!
A creative way to eat more veggies!
It was initially in an effort to get my kids, who LOVE tacos, to eat more veggies, but since everyone loved the cauliflower ceviche so much, I’ll be making it for Lent!
Ceviche with Clamato Original
This lent cauliflower ceviche recipe is jam-packed with fresh ingredients like cauliflower, tomatoes, avocados, cilantro, and celery. I added jalapeños for some kick, but the real star is the Clamato!
Luckily, I can easily grab all these ingredients right at my local Walmart! Saving money is important for a large family like mine! I love that I can count on Everyday Low Prices when shopping for my home & grocery essentials at Walmart!
My ceviche wouldn’t be my ceviche if it didn’t have Clamato! I love to use it for my shrimp ceviche lasagna and this crab coleslaw salad as well. It’s a versatile way to add a fresh flavorful touch to all my lent recipes.
Another favorite that I like to keep handy for cooking: ReaLime and ReaLemon (also conveniently located in Walmart juice aisle)! These two are my husband’s go-to for all his side salads but you can also use them in so many ways for cooking as I did with this ceviche!
How To Make Cauliflower Ceviche
Ingredients:
1 head Cauliflower cut into florets
Clamato The Original – 1 Cup
Diced tomato – 1 cup
Serrano Pepper or jalapenos (remove seeds for less of a kick) – 1 diced
Diced white onion – 1/2 cup
ReaLime – 1/2 cup
ReaLemon – 1/2 cup
Cilantro – 1 tbsp
Worcestershire sauce – 2 tbsp
Cayenne pepper – 1 1/2 tsp
Avocados – 2
Taco shells or soft tortillas Salt – 6
Instructions:
In a large pot, boil salted water on high. Boil cauliflower for 3-4 minutes.

Chop cauliflower into florets.
In a bowl add tomato, onion, Serrano pepper, cilantro, lemon, and lime juice,worchestersire sauce, and cayenne pepper. Place in the fridge to marinate for 15-20 minutes.
Toss in cauliflower and mix well. Season with salt and pepper. Serve on taco shells and top with more cilantro, avocado, and queso fresco! All these ingredients can easily be found at Walmart! Pin for later!
