Ingredients

  • 1 yellow onion
  • 2 tsp ground cumin
  • 3 tsp chili powder
  • 1 tsp oregano
  • 14 oz can crushed tomatoes
  • 1 can rotel tomatoes
  • 1 can black beans
  • 1 cup frozen corn
  • 2 chicken breasts
  • 4 cups reduced-sodium chicken broth

Toppings

  • 1 package tortilla strips (found in the salad toppings aisle)
  • ¼ cup cilantro (optional)
  • 1 avocado (optional)

Instructions

  1. Dice the yellow onion. Cook in a small pan on medium high heat until soft.

  2. Add the onions and all other ingredients (except for toppings) to slow cooker.

  3. Cook on high for 4 hours, stirring occasionally

  4. Shred chicken into bite-sized pieces and add back into the soup.

  5. Stir well.

  6. Serve & top with optional tortilla strips, cilantro, and avocado.
