Dice the yellow onion. Cook in a small pan on medium high heat until soft.
Add the onions and all other ingredients (except for toppings) to slow cooker.
Cook on high for 4 hours, stirring occasionally
Shred chicken into bite-sized pieces and add back into the soup.
Stir well.
Serve & top with optional tortilla strips, cilantro, and avocado.
