I’ve started to use my slow cooker a lot more and rediscovering the ease of cooking with it. Seriously, I don’t know why I haven’t been using it more often!
Since it’s been a lo cooler lately I’ve been having fun making all sorts of different soups. This healthy slow cooker chicken tortilla soup is a family favorite and it’s now a go-to on busy days thanks to the slow cooker!
This soup is surprisingly hearty and will have your home smelling amazingly delicious!

How To thicken chicken tortilla soup
Tortilla soup is normally has a thin liquid but if you’d like a thicker consistently you can thicken it with cornstarch. In a small bowl add 3 tbsp of starch with some soup liquid and mix until smooth. Stir mixture into soup.
Does Tortilla soup freeze well?
This chicken tortilla soup freezes very well! To freeze, cook soup according to directions below and allow it to cool. You may freeze soup (minus tortilla strips) in a large freezer bag or plastic container. When ready to serve you thaw your soup in the microwave.
Make it your own
Easily make this hearty soup low carb by leaving out the corn and tortilla chips.
Leave out chicken for a vegetarian version of this soup.
For a spicy kick top soup with jalapeños.

Ingredients:
- Yellow onion
- Ground cumin
- Chili powder
- Oregano
- Crushed tomatoes
- Rotel tomatoes
- Black Beans
- Frozen corn
- Chicken breasts
- Reduced-sodium chicken broth
Toppings
1 package tortilla strips (found in the salad toppings aisle)
1/4 cup cilantro (optional)
1 avocado (optional)
Instructions
Dice the yellow onion. Cook in a small pan on medium high heat until soft.
Add the onions and all other ingredients (except for toppings) to slow cooker.
Cook on high for 4 hours, stirring occasionally.
Shred chicken into bite-sized pieces and add back into the soup.
Stir well.
Serve & top with optional tortilla strips, cilantro, and avocado.

- 2 tsp ground cumin
- 3 tsp chili powder
- 1 tsp oregano
- 14 oz can crushed tomatoes
- 1 can rotel tomatoes
- 1 can black beans
- 1 cup frozen corn
- 2 chicken breasts
- 4 cups reduced-sodium chicken broth
Toppings
- 1 package tortilla strips (found in the salad toppings aisle)
- ¼ cup cilantro (optional)
- 1 avocado (optional)
Instructions
