Ingredients

  • 1.5 lbs chicken thighs cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 5 ounces cream cheese softened
  • 1 jalapeno pepper chopped
  • 1/3 cup bacon pieces
  • 1 cup cheddar cheese shredded
  • 1/4 cup green onions chopped

Instructions

  1. Preheat the oven to 350 degrees.

  2. Heat the oil in a skillet over medium-high heat.

  3. Add the chicken to the skillet and season with salt and pepper to taste.

  4. In a small bowl, combine the chili powder, cumin and paprika. Stir to combine.

  5. Sprinkle the spices over the chicken, and stir to coat well.

  6. Continue to saute the chicken until cooked through.

  7. In a bowl, mix together the cream cheese, jalapeno and bacon pieces.

  8. Mix the cream cheese mixture in with the chicken in the skillet.

  9. Sprinkle the cheddar cheese on top.

  10. Bake for 15-20 minutes.

  11. Serve garnished with fresh chopped green onions.
