I am a huge fan of everything about jalapeno poppers! I love the cream cheese, the heat from the peppers, and the way it all melts together. When I came up with this recipe, I knew my family was going to love it too! You can’t even tell it is low-carb.

What’s In Jalapeno Popper Chicken
Here’s what I used in this recipe, along with any substitutions you can make.
- Chicken – I used thighs, but you can use chicken breasts instead. To save time, just use a rotisserie chicken from the grocery store.
- Spices – Chili Powder, Cumin, Paprika
- Cream Cheese
- Jalapeno Pepper – make sure and remove all the seeds
- Bacon Pieces
- Cheddar Cheese – use pre-shredded cheese to save you prep time
- Green onions – for garnish, this can be omitted

I think what makes this recipe stand out from the rest is the spices I used. It isn’t just a cheesy chicken skillet. The cumin, paprika, and chili powder all combine to give this dish a ton of kick!
Taste it before you serve it to your kiddos. If you think it’s a touch too spicy, you can cut down how much paprika you used. Another way to make it milder is to use more cheese.

Prep Time: 15 minutes
Cook Time: 25-30 minutes

Ingredients:
- Boneless skinless chicken thighs
- Olive oil
- Chili powder
- Cumin
- Paprika
- Salt and pepper
- Cream cheese softened
- Jalapeno pepper
- Bacon pieces
- Shredded cheddar cheese
- Green onions
Instructions:
Preheat the oven to 350 degrees.
Heat the oil in a skillet over medium-high heat.
Add the chicken to the skillet and season with salt and pepper to taste.
In a small bowl, combine the chili powder, cumin and paprika. Stir to combine.
Sprinkle the spices over the chicken, and stir to coat well.
Continue to saute the chicken until cooked through.
In a bowl, mix together the cream cheese, jalapeno and bacon pieces.
Mix the cream cheese mixture in with the chicken in the skillet.
Sprinkle the cheddar cheese on top.
Bake for 15-20 minutes.
