Sometimes I really want something different for Taco Tuesday – and so does my family. Love that jalapeno poppers have so many different recipes you can make with those basic flavor combinations. This skillet meal is one of our favorites.

I am a huge fan of everything about jalapeno poppers! I love the cream cheese, the heat from the peppers, and the way it all melts together. When I came up with this recipe, I knew my family was going to love it too! You can’t even tell it is low-carb.

I made some buffalo chicken jalapeno poppers that are gluten-free and have the unmistakable flavor of buffalo chicken.

Another idea is to turn it into a salad. My jalapeno popper chicken salad is creamy and tastes best chilled out of the refrigerator.

Finally, making a low-carb jalapeno popper sheet pan pizza is perfect for parties or if you want to make something your kids will eat with you.

What’s In Jalapeno Popper Chicken

Here’s what I used in this recipe, along with any substitutions you can make.

  • Chicken – I used thighs, but you can use chicken breasts instead. To save time, just use a rotisserie chicken from the grocery store.
  • Spices – Chili Powder, Cumin, Paprika
  • Cream Cheese
  • Jalapeno Pepper – make sure and remove all the seeds
  • Bacon Pieces
  • Cheddar Cheese – use pre-shredded cheese to save you prep time
  • Green onions – for garnish, this can be omitted

I think what makes this recipe stand out from the rest is the spices I used. It isn’t just a cheesy chicken skillet. The cumin, paprika, and chili powder all combine to give this dish a ton of kick!

Taste it before you serve it to your kiddos. If you think it’s a touch too spicy, you can cut down how much paprika you used. Another way to make it milder is to use more cheese.

Keto Chicken Meal Prep

This skillet recipe works for meal prep and can be made ahead of time. It reheats well, which is exactly the kind of recipe I love making and storing in the refrigerator (because who has time to make lunch?).

What To Serve With It

This skillet is so cheesy that all you need to make this a complete meal is your favorite veggie side. I would serve this with your favorite mashed cauliflower recipe. Another popular choice is to serve it with something colder like an easy keto broccoli salad.

Jalapeno Popper Chicken

Prep Time: 15 minutes
Cook Time: 25-30 minutes
Servings: 4 
Net Carbs: 4 net carbs per serving

Ingredients:

  • Boneless skinless chicken thighs
  • Olive oil
  • Chili powder
  • Cumin
  • Paprika
  • Salt and pepper 
  • Cream cheese softened
  • Jalapeno pepper 
  • Bacon pieces
  • Shredded cheddar cheese
  • Green onions 

Instructions:

Preheat the oven to 350 degrees. 

Heat the oil in a skillet over medium-high heat. 

Add the chicken to the skillet and season with salt and pepper to taste. 

In a small bowl, combine the chili powder, cumin and paprika. Stir to combine.

Sprinkle the spices over the chicken, and stir to coat well.

Continue to saute the chicken until cooked through.

In a bowl, mix together the cream cheese, jalapeno and bacon pieces.

Sprinkle the cheddar cheese on top.

Serve garnished with fresh chopped green onions and a side of these low carb chicken skin cracklings (aka chicharrones)!

  • 1.5 lbs chicken thighs cut into bite-sized pieces

  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 5 ounces cream cheese softened
  • 1 jalapeno pepper chopped
  • 1/3 cup bacon pieces
  • 1 cup cheddar cheese shredded
  • 1/4 cup green onions chopped

Instructions
