These low carb bell pepper nachos are a healthy snack and delightfully low in carbs.
Slice bell peppers in half, remove seeds. Place bell peppers on a baking sheet.
If your chorizo is not crumbled, remove casings and crumble yourself. Saute in a skillet, over medium heat, until fully cooked.
Top the bell peppers with cooked chorizo crumbles. Add cheeses, chopped tomato, red onion and jalapeno slices.
Cook at 400 degrees F for approximately 8-10 minutes, or until the cheese is melted.
Remove from the oven and top with fresh parsley and a drizzle of sour cream, if desired.
