Anytime that you crave some nachos while you are on the keto diet, whip up a batch of these! They have the same spicy flavor as traditional nachos, but without the carbs from the chips.
Low Carb Chorizo Recipes
I love making chorizo recipes. This sausage really spiced up my keto zucchini taco lasagna and I’m using it again for these amazing nachos! Even though you can make this recipe with ground beef, ground chicken, or ground turkey, I think it tastes perfect with the chorizo.
If you are going to replace the chorizo with another meat, I suggest adding a little more spice to the dish.
Bell Pepper Recipe Ideas
For these nachos, I just sliced the bell peppers in half and topped them with all the nacho toppings and then baked it all in the oven. If you want to be able to pick up the nacho toppings like you do with chips (and make this finger food), then don’t bake the peppers. Instead, slice them into triangles (like chips). Then, make all the toppings on the stove in a skillet.
Use the raw bell pepper pieces to scoop up the nachos. It will have the same crunch as the chips!
I think baking it makes the peppers taste a little sweeter but I don’t mind using a fork and knife to eat my keto nachos – it tastes so delicious!
I used a bag of mini bell peppers – so they ended up being almost bite-sized anyway. If you use full-sized peppers, I suggest cutting them up into smaller pieces first.
Easy Healthy Nachos
Another idea is to cut up cauliflower florets and use them instead of bell peppers. Either way, this will taste out of this world!
When they come out of the oven, eat them as soon as possible. It tastes best when it is fresh and hot. Customize the nachos with your favorite keto-friendly toppings. Add some sour cream and avocados – and don’t forget the hot sauce! Yum!
How To Store Keto Nachos
Like I said, these taste the best when they are fresh out of the oven. If you want, you can store all of them in an airtight container in the refrigerator. Just keep in mind that the cheese will harden and the peppers will become softer. I recommend storing them for up to 3 days and then reheating them on a skillet.

- Mini bell peppers
Chorizo crumbled
Cheddar
White cheddar
Roma tomato – chopped
Red onion – chopped
Jalapeno
Optional garnish: fresh parsley, sour cream
INSTRUCTIONS:
1. Slice bell peppers in half, remove seeds. Place bell peppers on a baking sheet.
2. If your chorizo is not crumbled, remove casings and crumble yourself. Saute in a skillet, over medium heat, until fully cooked.
3. Top the bell peppers with cooked chorizo crumbles. Add cheeses, chopped tomato, red onion and jalapeno slices.
4. Cook at 400 degrees F for approximately 8-10 minutes, or until the cheese is melted.
5. Remove from the oven and top with fresh parsley and a drizzle of sour cream, if desired.
