This low carb Reuben sandwich is made with corned beef, sauerkraut, and uses keto-friendly chaffles as the bread.
Preheat the mini waffle maker.
Add the mozzarella cheese, caraway seeds and eggs to a mixing bowl and whisk to combine.
Place ¼ of the batter into the waffle maker, and cook to your liking
Repeat step 3 until you have made 4 chaffles and used all of your batter.
Whisk together the ingredients for the sauce until well combined.
Place a layer of shaved corned beef on the top of one chaffle, followed by ⅓ cup of the sauerkraut and a piece of Swiss cheese. Top the mixture with a serving of the dressing and top the sandwich with another chaffle. You can drizzle more dressing on the top of the sandwich as well if desired.
