My favorite way to make a low-carb sandwich is by first making an easy chaffle. What is a chaffle? It’s a savory waffle made with a combination of mozzarella cheese and eggs.
When you fry them together on a mini wafflemaker, they become crispy and you can eat them like bread! Trust me, they are a must on the keto diet.
This chaffle is perfect for lunch or dinner. If you want to serve it for dinner, eat it with a side of cheesy keto garlic bread. I would also serve it with a chopped salad on the side too.
What Is A Reuben Sandwich?
A traditional Reuben sandwich is a grilled sandwich that is packed with corned beef, swiss cheese, sauerkraut, and Russian dressing. Stories say that a chef from Omaha Nebraska created the first one and it stuck!
Easy Keto Chaffle Bread
The easiest way to make keto chaffle bread is to combine mozzarella cheese and eggs and then fry that mixture on a waffle maker.
I like to make a few of them in the morning and then use them for different meals throughout the day. You can use them as bread for sandwiches or just eat them on the side with some meat and veggies.
I like to use the chaffle bread to eat a keto BLT sandwich. It tastes amazing together!
Keto Reuben Sandwich
This sandwich has all the classic flavors of a real Reuben sandwich. The crispy chaffles even resemble the toasted bread. The biggest difference is that I created my own dressing and made it sugar-free.
In fact, I have used this dressing before in my keto Reuben casserole. It is perfectly tangy and the horseradish and hot sauce gives it some heat!
Is Corned Beef Keto?
Yes, corned beef and deli corned beef are both keto-friendly. If you are buying deli or lunch meats, always check the labels and ingredients first.
You don’t want to buy anything with added sugars or glazes. Honestly, corned beef isn’t usually made with extra sugar, so chances are you will be just fine.
Corned Beef Substitute
If you can’t find corned beef deli meat, you can always just use real shredded corned beef. Other replacements include a slice of salty deli meat like pastrami. Roast beef will also taste just fine on this sandwich too.

Ingredients:
For the chaffle:
Shredded mozzarella cheese
Eggs
Caraway seeds
Corned beef deli meat
Sauerkraut
Swiss cheese
For the dressing:
Mayonnaise
Sugar free ketchup
Horseradish
Hot sauce
Worcestershire sauce
Salt and pepper to taste
Instructions:
1. Preheat the mini waffle maker.
2. Add the mozzarella cheese, caraway seeds and eggs to a mixing bowl and whisk to combine.
3. Place ¼ of the batter into the waffle maker, and cook to your liking.
4. Repeat step 3 until you have made 4 chaffles and used all of your batter.
5. Whisk together the ingredients for the sauce until well combined.
6. Place a layer of shaved corned beef on the top of one chaffle, followed by ⅓ cup of the sauerkraut and a piece of Swiss cheese.
Top the mixture with a serving of the dressing and top the sandwich with another chaffle.
You can drizzle more dressing on the top of the sandwich as well if desired.
