In a bowl, whisk together the minced garlic, parsley, red wine vinegar, oregano, red pepper flakes, salt, pepper, lime juice and olive oil until well combined.
Place the chicken in the bowl and toss to coat well in the sauce.
Marinate the chicken in the fridge for at least 2 hours, but preferably overnight.
Heat an indoor or outdoor grill. Grill the chicken for 5-10 minutes per side until it reaches an internal temperature of 165 degrees. Grill times will vary depending on the size and thickness of your chicken thighs.
