I made this recipe with chicken thighs because they reheat really well for meal prep. Plus, thighs are a very budget-friendly cut of meat. If you prefer chicken breasts or want to make some chimichurri wings, go right ahead! This exact recipe works out perfectly for those too.

How To Make Chimichurri Sauce
I stayed true to the authentic ingredients in traditional chimichurri sauce – parsley, garlic, vinegar, olive oil, and red chili pepper flakes but added a few other herbs too, such as oregano. I think it adds a sweeter note and balances out the red pepper flakes’ heat. Then, I added a splash of lime juice.
The lime juice really adds a bright zest to the chicken. The cooling effect of the lime juice on your tongue will instantly react with the heat from the chili to create a sauce that is out of this world! It’s perfect – you don’t need any other chimichurri sauce (even if you aren’t on a low-carb diet!).
