Ingredients

Slaw

  • 1 1/2 cups Purple Cabbage shredded
  • 1 Green Bell Pepper sliced into strips
  • 1 Yellow Bell Pepper sliced into strips
  • 1 Orange Bell Pepper sliced into strips

Cilantro Lime Dressing

  • 1/4 cup Mayonnaise
  • 1/4 cup Greek Yogurt plain
  • 2 tbsp Lime Juice
  • 1 tsp Garlic minced
  • 1/4 tsp Cumin
  • 1/4 cup Cilantro chopped

Instructions

  1. Toss together the purple cabbage and bell pepper strips in a large mixing bowl.

  2. In a small bowl, combine the ingredients for the dressing until smooth.

  3. Pour the dressing over the vegetables and toss to coat well.

  4. Serve garnished with additional cilantro if desired.
