Are you as big of a fan of cilantro lime recipes as I am? I can’t get enough of it! They just go together so perfectly. This bell pepper slaw is made with shredded purple cabbage and a dressing that is made with both mayo and Greek yogurt. It’s creamy and zesty and has that delicious cilantro lime flavor that I love!

The creamy white dressing can’t cover up all the vibrant colors that are in this slaw. It’s a rainbow of nutrition and flavors – it’s so good for you, and so good to eat.

I used green, yellow, and orange bell peppers. If you only have one color of pepper on hand, use it! You don’t have to use all three colors. You can also add some shredded green cabbage to the mix too if you want.

I’m a huge fan of this cilantro lime dressing. Make a huge batch of it and store it in a sealed mason jar in your refrigerator. Use it on chopped lettuce salad or as a dip for raw veggies. It’s incredible.

INGREDIENTS:

Slaw

  • Purple Cabbage
  • Green, Orange and Yellow Bell Peppers

Cilantro Lime Dressing

  • Mayonnaise
  • Greek Yogurt
  • Lime Juice
  • Garlic
  • Cumin
  • Cilantro

INSTRUCTIONS:

Toss together the purple cabbage and bell pepper strips in a large mixing bowl.

In a small bowl, combine the ingredients for the dressing until smooth.

Pour the dressing over the vegetables and toss to coat well.

Serve garnished with additional cilantro if desired.

Slaw

  • 1 1/2 cups Purple Cabbage shredded
  • 1 Green Bell Pepper sliced into strips
  • 1 Yellow Bell Pepper sliced into strips
  • 1 Orange Bell Pepper sliced into strips

Cilantro Lime Dressing

  • 1/4 cup Mayonnaise
  • 1/4 cup Greek Yogurt plain
  • 2 tbsp Lime Juice
  • 1 tsp Garlic minced
  • 1/4 tsp Cumin
  • 1/4 cup Cilantro chopped

Instructions

  1. Toss together the purple cabbage and bell pepper strips in a large mixing bowl.
