If you enjoy avocado toast, then you will love ricotta toast. This keto version is made with 90-second bread and creamy ricotta cheese.
Place the oven on broil.
Make a batch of 90 second bread in a square container in the microwave and let cool.
Slice the bread in half so that there are now two slices of bread instead of just one.
Toast the bread on both sides under the broiler.
In a bowl, combine the ricotta cheese, lemon juice and salt and pepper to taste.
Cut each slice of bread in half.
Spread the ricotta mixture on the bread and place on a plate.
Grate some lemon zest over the top of each piece of bread before serving.
