I love my recipe for keto 90-second bread (recipe below). It’s as easy as mixing up the ingredients and microwaving it for 90 seconds. It comes out as bread that you can place in the toaster or crisp up under your oven’s broiler.
Then, you can fill this toast with all of your favorite low-carb toppings. If you haven’t tried to use ricotta cheese as a topping for toast yet, then try it! You are going to love it.
Is Ricotta Cheese Keto
Yes, ricotta cheese is keto-friendly, but you still need to keep track of how much you are eating. One serving (1/4 cup) has 4.5g net carbs. This recipe uses a little bit more than that (1/3 cup) but it has so much fiber in it from the toast that it brings the net carbs amount down to 2g.
Healthy Ricotta Toast
Ricotta has lots of healthy fats and is an excellent source of protein. In fact, one serving (1/4-cup) has 6.3g fat and 4.6g of protein. There is even more protein in this recipe because the toast is made with almond flour.
I added even more fiber (and taste) to this toast by topping it with some lemon zest. Fresh lemon zest has the most amazing flavor you have ever tried!
Easy Keto Breakfast
This recipe makes a delicious summer breakfast. It’s creamy and has the summertime lemon taste you will enjoy. You can also serve it for brunch or enjoy it as a light snack.
It looks so pretty that you’ll want to show it off! Serve it with some bacon and hard-boiled eggs for an easy breakfast that you can take with you on the go. You can also make keto bacon egg and cheese chaffle with it, along with some keto cinnamon rolls.
What To Use Ricotta For
Ricotta can often be used in the same way as cream cheese. I’ve used it to fluff up my keto pancakes. People also like to use it on their lasagna too. It’s a creamy cheese that isn’t as thick as cream cheese, so it is easier to use.
It’s also commonly used to make desserts like cheesecakes or as a base for a tart.
I love it on top of toast because it is so easy to spread and it has such a mild flavor that it doesn’t overpower fruit when I add it on top.
Healthy Breakfast Toast Toppings
For this toast, I kept the toppings minimal. I just used a little squeeze of lemon juice and some lemon zest. There are lots of other healthy choices you can place on top of your keto toast.

How To Store 90-Second Keto Bread
Since this bread is so easy to make, I suggest not trying to store it for longer than a day or two. You can keep it at room temperature in an airtight bag or container. After about 3 days, the texture will change slightly – it’s just a type of bread that tastes a lot better when it is made fresh.

Instructions:
Place the oven on broil.
Make a batch of 90 second bread in a square container in the microwave and let cool.
Slice the bread in half so that there are now two slices of bread instead of just one.
Toast the bread on both sides under the broiler.
In a bowl, combine the ricotta cheese, lemon juice and salt and pepper to taste.
Spread the ricotta mixture on the bread and place on a plate.
Grate some lemon zest over the top of each piece of bread before serving.
