Ingredients

  • 4 Chicken Breast Cutlets cut thin
  • 1 tbsp Olive Oil
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 2 tsp Garlic minced
  • 1 1/2 tsp Italian Seasoning
  • 1 cup Canned coconut milk unsweetened
  • 4 cups Fresh Spinach

Instructions

  1. Heat the oil in a large skillet over medium high heat.

  2. Season the chicken with salt and pepper to taste and add to the heated skillet. Saute until seared on both sides and cooked through. Remove and set aside.

  3. Add the butter to the skillet and reduce the heat to medium.

  4. Saute the onion until softened.

  5. Stir in the minced garlic and saute another 30 seconds.

  6. Pour in the coconut milk.

  7. Mix in the Italian seasoning and salt and pepper to taste.

  8. Stir in the spinach and cook until wilted.

  9. Add the chicken back to the skillet and toss to coat in the sauce before serving.
