I created a low-carb and dairy-free version that any busy mom can make. It only takes 30 minutes from start to finish – and it has the same aromatic herbs and flavors as traditional Tuscan recipes.
If you want to use a can of sun-dried tomatoes and add some fresh kale, do it! The tomatoes will add a few more carbs to the total, so keep that in mind. Both ingredients will still keep the recipe plenty keto-friendly.

This recipe is the definition of comfort food. As the Italian spices simmer in the creamy broth, all the flavors soak into the chicken. Want to elevate this a little more? Add some crumbled bacon and parmesan cheese. You are going to love how this turns out.
If you want, you can also make this recipe with pork chops – either boneless or bone-in. It will still taste the same, but the cooking times might be a little different. Just use an instant-read food thermometer to check the internal temperature. Pork should be cooked until it reaches 145 degrees F with a 3-minute rest.

This recipe makes some of the most tender and flavorful chicken you have ever tried. Make extra because you can use the chicken in your meal prep for the week. I like to shred the cooked chicken breast and use it in a chicken salad later in the week.
Store the extra chicken without the cream sauce. Keep it in an airtight container in the refrigerator for up to 3 days.
Creamy Coconut Chicken Recipe
This recipe comes together super quickly, but you can also use the same ingredients and turn it into a slow cooker meal. If you are going to make it in the slow cooker, I suggest using thicker chicken breast cuts. The thin pieces will cook too quickly.
Chicken breast cooks really fast in the slow cooker. You just need to cook it on low for 4-6 hours or on high for 2-4 hours.
What To Serve With Tuscan Chicken
You don’t need much to make this skillet recipe into a complete meal. I like to serve my popular keto garlic knots on the side or make some low-carb garlic toast. Add some color to the plate with some cheesy asparagus. If you like pasta with your chicken, then make some keto Feta baked pasta with tomatoes. There are so many ways to turn this easy chicken skillet into a filling dinner.

Ingredients:
Chicken Breast Cutlets
Olive Oil
Butter
Onion
Garlic
Italian Seasoning
Canned Coconut Milk
Fresh Spinach
Instructions:
Heat the oil in a large skillet over medium high heat.
Season the chicken with salt and pepper to taste and add to the heated skillet. Saute until seared on both sides and cooked through. Remove and set aside.
Add the butter to the skillet and reduce the heat to medium.
Saute the onion until softened.
Stir in the minced garlic and saute another 30 seconds.
Pour in the coconut milk.
Mix in the Italian seasoning and salt and pepper to taste.
Stir in the spinach and cook until wilted.
Add the chicken back to the skillet and toss to coat in the sauce before serving.
