Keto Sausage Egg and Cheese Bites

Ingredients

  • 6 Eggs
  • 1 pound Breakfast Sausage
  • 1/2 Red Bell Pepper chopped
  • 3/4 cup Sharp Cheddar Cheese shredded
  • 1/4 cup Pepper Jack Cheese shredded
  • Salt and Pepper

Instructions

  1. In a large bowl, whisk eggs. Add chopped bell pepper, cheeses and a dash of salt and pepper. Set aside.

  2. In a skillet, begin to brown the sausage. Once the sausage is crumbled and fully cooked, remove from heat.

  3. Spoon equal amount of the cooked sausage into each muffin tin. Top with the egg mixture.

  4. Bake at 350 degrees F for approximately 20-25 minutes.

  5. Remove and let cool. Garnish with fresh parsley. ENJOY!
