Keto Sausage Egg and Cheese Bites

I don’t know about you, but sometimes I really don’t feel like cooking breakfast. It’s the reason so many of my breakfast recipes on this blog are ones that I can make the night before and just heat up. 

Keto Sausage Egg and Cheese Bites

If you are like me, then this recipe is going to be perfect! You’ll start your day off with a high-protein breakfast that will kick your metabolism into gear right away. 

I also discovered that a high-protein and low-carb breakfast gives me long-lasting energy right when I need it, in the morning.

When it comes to the keto diet, just about any ground sausage will be ket0-friendly. Just in case, I always check the ingredient labels. Avoid anything with added sugar, including maple syrup. 

Keto Sausage Egg and Cheese Bites

For these portable breakfast cups, I like to use spicy breakfast sausage. It has a kick and makes them taste incredible! Use your favorite type of breakfast sausage in these cups. 

Keto Egg Muffins 

These little egg muffins are the perfect thing to serve at a party or brunch because they are fantastic for almost any type of food sensitivities. They have no flour in them at all. If you know someone that is lactose intolerant, just leave out the cheese. They are still just as tasty.

In fact, without the cheese, these are Whole30 compliant too.

Reheat the leftovers and eat them with your lunch. They are delicious with your favorite type of chaffle on the side. Or, just add a delicious chopped salad to go along with your sausage cheese bites. Or, munch on some low-carb breadsticks for a filling lunch.

If you want them to taste spicier, add a few dashes of hot sauce on top. These are delicious and portable breakfast or lunch.

They don’t need anything else with them, they are a complete meal in the shape of a muffin. If your kids like dips, then give them a little bit of ketchup along with it. 

Keto Sausage Egg and Cheese Bites Recipe 

Here’s he list of ingredients that you’ll need to make these keto sausage egg and cheese bites. Exact measurements and instructions are located is in the printable recipe card, just a little bit further below. 

INGREDIENTS:
Eggs
Breakfast sausage
Red bell pepper
Sharp cheddar cheese – shredded
Pepper jack cheese – shredded
Salt & pepper
Fresh parsley

INSTRUCTIONS:
1. In a large bowl, whisk eggs.  Add chopped bell pepper, cheeses and a dash of salt & pepper.  Set aside.

2. In a skillet, begin to brown the sausage.  Once the sausage is crumbled and fully cooked, remove from heat.

3. Spoon equal amount of the cooked sausage into each muffin tin.  Top with the egg mixture.

4. Bake at 350 degrees F for approximately 20-25 minutes.

5. Remove and let cool. Garnish with fresh parsley. ENJOY!

  • 6 Eggs
  • 1 pound Breakfast Sausage
  • 1/2 Red Bell Pepper chopped
