Keto Stuffed Cabbage Rolls

Ingredients

Stuffed Cabbage Rolls

  • 12 large Steamed Cabbage Rolls
  • 2 cups Cauliflower Rice
  • 1 pound Ground Beef
  • 1/2 pound Ground Pork
  • 1 large Egg
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1/2 Onion chopped finely

Tomato Sauce

  • 1 can Diced Tomatoes
  • 1/2 tsp Swerve Confectioner's Sugar Substitute
  • 1 tsp Italian Seasoning
  • 1 tsp Onion Powder
  • 2 tsp Minced Garlic

Instructions

  1. Preheat the oven to 375 degrees.

  2. Steam the cabbage, and remove 12 of the large leaves from the outside.

  3. Cook the cauliflower rice, and drain the extra water from it well.

  4. Add the ground beef, pork, egg, riced cauliflower, Italian seasoning, garlic powder, onion and salt and pepper to taste to a large mixing bowl, and knead to combine well.

  5. Place the sauce ingredients in a food processor, and pulse until smooth.

  6. Pour the sauce into the bottom of a 9x13 baking dish.

  7. Cut the thick rib from the bottom of each cabbage leaf.

  8. Put a portion of the meat mixture into each cabbage leaf, and fold it up into a roll.

  9. Place the cabbage rolls seam side down into the baking dish on top of the sauce.

  10. Bake for 45 minutes.
