Keto Stuffed Cabbage
It’s so much fun to mix things up sometimes! Roll up some stuffed cabbages when you get bored with casseroles and skillet meals. These are as much fun to eat as they are to make.
Even better is the fact that each stuffed cabbage roll only has 3 grams net carbs! Enjoy a few of them for lunch. They are so filling that you won’t want more than a few them at a time.
I made a mild recipe that is still bursting with flavor. Add some red pepper flakes and a drizzle of sriracha if you love adding heat to your food. The red pepper flakes will go perfectly with the Italian seasoning and garlic powder.
How To Make Cabbage Rolls
You don’t have to bake or boil the cabbage leaves before you add the stuffing ingredients and roll them up. You’ll bake them after you roll them up. As they bake, the leaves will soften.
Whether you make homemade cauliflower rice or steam some frozen cauliflower rice, remember to remove as much water as you can. Place the cauliflower rice in a cheesecloth and squeeze it. If you don’t do this, the cabbage rolls will have too much liquid in them. It isn’t pretty.
You also need a food processor. This is the secret to effectively combining all the filling ingredients. If you don’t have a food processor, a high-powered blender will work too.
Can You Freeze Cabbage Rolls
Yes, you can freeze these cabbage rolls and save them for later. Follow all the steps in the recipe card, up until you place the cabbage rolls in the pan. Place them in a freezer-safe aluminum baking pan.
Then, wrap it tightly with aluminum foil and label it. The cabbage rolls will stay fresh in the freezer for up to six months.
When you are ready to eat them, let them thaw overnight in the refrigerator. Bake them like normal.
What To Eat With Cabbage Rolls
These cabbage rolls are an entire meal on their own! They have tons of veggies and meat in them. For a little more color and flavor, serve a bowl of keto cucumber cauliflower salad with your meal.
It will also taste delicious with some keto pumpkin breadsticks and some mashed cauliflower.
