Ingredients

  • 3 cups Riced Caulflower
  • 1/3 cup Sugar-Free Dried Cranberries
  • 1/3 cup Chopped Roasted Walnuts
  • 2 tbsp Chopped Parsley
  • 2 tbsp Chopped Red Onions
  • 2 tbsp Olive Oil
  • 1 tbsp White Wine Vinegar

Instructions

  1. Cook the riced cauliflower until crisp tender. Drain well.

  2. Add the cauliflower rice, cranberries, walnuts, parsley and red onion to a mixing bowl, and stir to combine.

  3. In a small bowl, whisk together the oil, vinegar and salt and pepper to taste.

  4. Pour the vinaigrette over the cauliflower mixture, and toss to combine well.

  5. Serve immediately, or chill before serving if desired.
