This salad is so easy to devour! It will be gone in no time. This recipe makes enough for six servings, but since there are just 2 grams net carbs in each serving, you can help yourself to a few servings at once.
Chopped roasted walnuts, sweet dried cranberries, and earthy cauliflower rice combine to make an unforgettable salad. It looks so colorful and festive that you’ll want to share it at your next party or family dinner.
Serve this salad with a keto turkey pot pie for a filling comfort food. It will also look and taste amazing with some keto spinach stuffed chicken too.
Cauliflower Cranberry Salad
You don’t have to use cauliflower rice – although it really is prettier to look at when you use riced cauliflower. To save yourself time, you can mix in steamed or roasted cauliflower florets.
If you’re going to use cauliflower florets, chop them up into very small pieces so they are easier to eat.
The best thing about this salad is the super-simple vinaigrette! It’s just olive oil and white wine vinegar. Feel free to swap the type of vinegar and oil you use to make it with whatever you have on-hand.
I’ve made delicious salad dressings with red wine vinegar and avocado oil before.
Cranberry Walnut Salad
A food processor will make this entire recipe so much easier to make. Use it to chop up fresh cauliflower rice and to chop up the walnuts into smaller pieces.
This recipe uses dried cranberries, usually not a keto-friendly snack or ingredient. Since I only added 1/3 a cup in the entire recipe, there are just a few pieces in each serving. Feel free to leave them out if you are really trying to cut down on your macros.
Cauliflower Rice Salad
This is just as delicious as my keto cranberry chicken salad. The biggest difference is that this cauliflower rice salad is higher in fiber and has less protein in it. This is more of a side dish than a main course.
Using cauliflower rice in a salad is tricky. If you just grab a frozen bag and steam it, it will have a bunch of water in the bottom of the bag. Pour the entire bag into a strainer and press the cauliflower down into the strainer with a spoon or cup.
Try to remove as much moisture as you can. If the cauliflower rice has too much moisture in it, the entire salad might be a tad soggy.
Make Ahead Salad
This is a perfect salad to make ahead and use throughout the week! Just store it in an airtight container. It will stay fresh for up to three days.
Keep the dressing in a separate container from the salad to make it last longer.
