Creamy Keto Tuscan Salmon

Faster than takeout, Tuscan salmon only takes 30 minutes! Simmered in a garlic butter wine sauce, it's the perfect keto dinner.

Ingredients

  • 4 Salmon Fillets 5-6 ounces each
  • 2 tbsp Olive Oil
  • 3 tbsp Butter
  • 3 tsp Minced Garlic
  • 1/2 Onion chopped
  • 1/3 cup White Cooking Wine
  • 1 1/4 cup Heavy Whipping Cream
  • 3 cups Fresh Spinach
  • 1/4 cup Sun Dried Tomatoes chopped
  • 1/2 tsp Dried Basil
  • 1/3 cup Parmesan Cheese grated
  • 1/3 cup Bacon Pieces

Instructions

  1. Season the salmon with salt and pepper to taste.

  2. Place the oil in a skillet over medium high heat.

  3. Sear the salmon for 5 minutes on each side, and remove from the skillet. Drain the excess oil.

  4. Reduce the heat to medium, and melt the butter in the skillet.

  5. Stir in the onions, and saute until softened.

  6. Mix in the garlic, and saute another 30 seconds.

  7. Pour in the white cooking wine, and simmer until the liquid is reduced by half.

  8. Place the sun dried tomatoes into the skillet, and stir to combine.

  9. Add the heavy whipping cream, salt and pepper to taste and the basil. Simmer until the sauce has thickened.

  10. Stir in the Parmesan cheese, bacon and spinach, and simmer until the spinach has wilted.

  11. Return the salmon to the skillet, and toss to coat in the sauce.

  12. Serve with additional bacon pieces for garnish.
