Juicy, savory, and aromatic, mayo roasted chicken is the tastiest one-pan meal you can make for your family.
Preheat the oven to 425 degrees F.
Pat chicken dry with paper towels. Set aside for now.
Roughly chop celery, carrots, onions and lemon. Stuff as much of these ingredients into the chicken cavity as you can. Place the remaining ingredients in the bottom of your pot or roasting pan.
Place the chicken on top of the vegetables.
In a bowl, whisk together the ingredients for the Mayonnaise Mixture.
Generously spread the mixture over the chicken, then top with desired amount of fresh sage and thyme sprigs.
Cook for approximately 75-90 minutes, or until the internal temp is 165 degrees F. **If the chicken is browning too quickly, loosely tent with foil.
Remove from the oven and let rest for 10 minutes.
