When you make this roasted chicken with fresh herbs. As it roasts, the aromas will infuse into the meat in a way that dried, ground herbs just can’t.
The best herbs to use with chicken include sage and thyme. You should also use fresh lemon, not jarred lemon juice. It will be zestier and brighter.
What To Eat With Chicken
This mayo roasted chicken is made with veggies so it’s an entire meal in one pan. You don’t have to add more sides, but you can if you want.
The best sides to add to the table include mashed cauliflower, garlic knots, or keto breadsticks. Just add your favorite low-carb breads to the side and dinner is ready. If you want more veggies to the dinner, add a broccoli salad. It’s the perfect starter.

Here are the ingredients to make this keto mayo roasted chicken recipe. The exact measurements and instructions are in the printable recipe card, just a little below.
INGREDIENTS:
Whole chicken
Celery stalk
Large carrots
White onion
Red onion
Lemon
Fresh sage sprigs
Fresh thyme sprigs
Mayonnaise Mixture:
Preferred mayo
Minced garlic
Worcestershire sauce
Apple cider vinegar
Salt & pepper
INSTRUCTIONS:
Preheat the oven to 425 degrees F.
Pat chicken dry with paper towels. Set aside for now.
Roughly chop celery, carrots, onions and lemon. Stuff as much of these ingredients into the chicken cavity as you can. Place the remaining ingredients in the bottom of your pot or roasting pan.
Place the chicken on top of the vegetables.
In a bowl, whisk together the ingredients for the Mayonnaise Mixture.
Generously spread the mixture over the chicken.
Top with desired amount of fresh sage and thyme sprigs.
Cook for approximately 75-90 minutes, or until the internal temp is 165 degrees F. **If the chicken is browning too quickly, loosely tent with foil.
Remove from the oven and let rest for 10 minutes.
