Low-Carb Chicken Caesar Pasta

Ingredients

  • 1 can Palmini linguine noodles rinsed and drained well
  • 1 pound Chicken Tenderloins
  • Salt and pepper to taste
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1/2 onion chopped
  • 2 tsp Minced Garlic
  • 1 cup Heavy Whipping Cream
  • 1/3 cup Ceasar Dressing
  • 1/3 cup Parmesan Cheese grated
  • 1/2 tsp Italian Seasoning

Instructions

  1. Heat the oil in a skillet over medium high heat.

  2. Season the chicken with salt and pepper to taste.

  3. Sear the chicken in the heated skillet until brown on both sides and cooked all the way through. Remove and set aside.

  4. Pour the excess oil out of the pan.

  5. Reduce the heat to medium, and melt the butter in the skillet.

  6. Add the onions, and saute until softened.

  7. Mix in the garlic, and saute another 30 seconds.

  8. Stir in the heavy whipping cream and caesar dressing. Simmer until the sauce thickens.

  9. Sprinkle in the parmesan cheese, and stir well.

  10. Place the palmini noodles in the skillet, and toss to coat in the sauce. Simmer for 5 minutes.

  11. Return the chicken to the skillet, and toss to coat in the sauce.

  12. Sprinkle with chopped parsley before serving.
