Ingredients

Souvlaki Chicken

  • 1 1/2 pounds Boneless Skinless Chicken Thighs cut into pieces
  • 1 large Zucchini sliced and halved
  • 6 ounces Mushrooms sliced
  • 1/2 Red Bell Pepper chopped
  • 1/2 Yellow Bell Pepper chopped
  • 1/2 Onion chopped
  • Feta Cheese garnish
  • Parsley y garnish
  • Tzatziki Sauce for serving

Souvlaki Chicken Marinade

  • 1/4 cup Olive Oil
  • 1 Lemon Juiced
  • 3 tsp Minced Garlic
  • 1/2 tsp Cumin
  • 1 tsp Rosemary
  • 2 tsp Oregano
  • Salt and Pepper to taste

Instructions

  1. Add the chicken and vegetables to a large mixing bowl.

  2. Pour the olive oil, lemon juice, garlic, cumin, rosemary, oregano and salt and pepper to taste into the bowl with the chicken and vegetables. Toss to combine well, and marinate for 2 hours or more.

  3. Heat a large skillet over medium high heat, and add the mixture to the skillet.

  4. Sear for 5-10 minutes, then reduce the heat to medium. Continue to saute until the chicken is cooked through.

  5. Serve garnished with parsley and feta cheese, with tzatziki sauce on the side.
