Ingredients

Salmon Sushi Cups

  • 2 Nori Sheets cut into fourths
  • ??? ??? SALMON (fill this in)
  • 1/2 tsp Rice Vinegar
  • 1 cup Cauliflower Rice cooked and drained of water
  • 2 tbsp Soy Sauce
  • 1 1/2 tbsp Mayonnaise
  • Salt and pepper to taste
  • Black and White Sesame Seeds

Honey Sriracha Sauce

  • 1 tsp Sriracha Sauce
  • 2 tbsp Sugar-Free Honey
  • 2 tsp Soy Sauce
  • 1 tsp Minced Garlic

Instructions

  1. Preheat the oven to 400 degrees.

  2. Place the squares of nori on a flat surface.

  3. Mix together the rice vinegar and cauliflower rice in a bowl.

  4. Add a few spoonfuls of the cauliflower rice to the center of each square of Nori.

  5. Press the squares of nori down into a well greased muffin tin.

  6. In a bowl, stir together the salmon, salt, soy sauce and mayonnaise.

  7. Spoon the salmon mixture into the nori cups.

  8. Bake for 15 minutes.

  9. Place the sauce ingredients into a microwave safe bowl, and heat at 30 second intervals until warmed through and slightly thickened.

  10. Drizzle the sauce over the sushi cups, and sprinkle with sesame seeds before serving.
