Nori is another name for sushi – it’s the green stuff usually wrapped around the outside (or the inside). Nori salmon sushi cups are a mess-free, high-fat, and low-carb alternative to sushi rolls.
Salmon is full of healthy fats and Nori is full of nutrients and super low in carbs. All in all, there are just 2 grams net carbs in each salmon nori cup!
You can enjoy them as a filling lunch or serve them at a party, knowing you’ll be able to eat them too.

Ingredient Substitutions
This is a very easy recipe to change and make your own. Here are a few of the easiest ingredient swaps you can make.
- Vegetarian – replace the salmon with diced cucumber and shredded carrots
- Cauliflower rice – replace it with either riced broccoli or make your own riced cabbage
- Soy Sauce – there are traces of gluten in soy sauce, so you might want to use coconut aminos instead

If this is your first time buying Nori seaweed sheets, always read the reviews. They will give you an idea about their quality.
You can easily find the brand Kaneyama at Walmart and it’s a Japanese company with high ratings. Nagai makes wonderfully tasting and low-priced Nori that you can buy on Amazon.
What To Eat With Sushi
This is a classic combination of flavors, so serve it with other familiar recipes that you love too.
A bowl of egg drop soup is the best thing to serve with it. If you want to stick with the Chinese food theme, you can’t go wrong with keto crab rangoon casserole. It’s a high-fat side dish that tastes just like the insides of a crab rangoon (without the deep-fried parts).
Even though I added cauliflower rice to the inside of the Nori cups, you can also serve some low-carb veggie egg fried rice with bacon on the side.
For some crunch, make some keto honey walnut shrimp. And stick with the finger-food them and add some keto scallion pancakes to the table.
Storage
These salmon nori cups taste best fresh. I don’t recommend trying to store leftovers in the refrigerator. The salmon will soften the Nori, and it won’t have the same crunch.
Keep leftover salmon sushi cups in an airtight food storage container in the refrigerator for no more than a day.
Making It

Preheat the oven to 400 degrees. Place the squares of nori on a flat surface.
Mix together the rice vinegar and cauliflower rice in a bowl.
Add a few spoonfuls of the cauliflower rice to the center of each square of Nori. Press the squares of nori down into a well greased muffin tin.
In a bowl, stir together the salmon, salt, soy sauce and mayonnaise.
Spoon the salmon mixture into the nori cups.
Bake for 15 minutes.
Place the sauce ingredients into a microwave safe bowl, and heat at 30 second intervals until warmed through and slightly thickened.
Drizzle the sauce over the sushi cups, and sprinkle with sesame seeds before serving.
