Cheesy Keto Southern Style Shrimp and Grits

Ingredients

Blackened Shrimp

  • 1 1/2 pounds Shrimp peeled and deveined
  • 3 tbsp Butter
  • Juice from 1/2 a lemon `
  • 1 tsp Blackened Seasoning
  • Salt and Pepper to taste
  • 2 tsp Minced Garlic
  • 1/4 cup Green Onions for garnish
  • 1/3 cup Bacon Pieces for garnish

Cheesy Cauliflower Grits

  • 4 cups Uncooked finely riced cauliflower
  • 1 cup Heavy Whipping Cream
  • 1/4 cup Chicken Broth
  • 2 tbsp Butter
  • 1 tsp Minced Garlic
  • Salt and Pepper to taste
  • 1 1/2 cups Shredded Cheddar Cheese

Instructions

  • Melt 3 Tbsp. of butter in a skillet over medium high heat on the stove.
  • Season the shrimp with the blackened seasoning and salt and pepper to taste.
  • Sear the shrimp in the melted butter until cooked through.
  • Stir in the garlic, and saute another minute.
  • Remove and keep warm.
  • Melt 2 Tbsp of butter in a pot over medium heat.
  • Stir in 1 tsp of minced garlic, and saute for 30 seconds.
  • Add in the cauliflower rice, and stir to combine.
  • Pour in the chicken broth and heavy whipping cream.
  • Simmer until most of the liquid is absorbed, and the cauliflower rice is tender.
  • Season with salt and pepper to taste.
  • Stir in the cheddar cheese until melted.
  • Top the cauliflower grits with the shrimp, and garnish with green onions and bacon pieces before serving.
