Ingredients

  • 12 ounces Cauliflower Rice
  • 2 Avocados Diced
  • 1/3 cup Feta Cheese Crumbled (optional)
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Minced
  • 1/2 White Onion chopped
  • 2 tsp Lime Juice
  • 1/4 cup Cilantro chopped

Instructions

  • In a skillet, begin to heat olive oil. Add onion and garlic, saute until tender.
  • Stir in cauliflower rice. Continue to saute until rice is fully cooked.
  • In a separate bowl, mash avocados. Stir in lime juice and fresh cilantro.
  • Add the avocado mash to the cauliflower rice skillet. Stir well.
  • Garnish with crumbled feta.
  • ENJOY!
