This is a beautiful, zesty, tasty, and surprisingly delicious recipe! In fact, it is so good that you’ll want to make it as a side dish for every Mexican recipe that you prepare.
Avocado is one of my favorite keto-friendly foods. It is high in healthy fats and antioxidants. I try to use it whenever I can because it makes every dish more filling and even healthier.
I used feta cheese in this recipe, but it is completely optional. Use mozzarella cheese or even goat cheese instead or just leave out the cheese entirely. It will taste just as delicious without cheese.
Low-Carb Riced Cauliflower
There are lots of fun ways that you can serve this skillet side dish. Fill some cheese taco shells with it and top with some chorizo sausage.
Some other ideas are to toss some shredded chicken into it for a one-pan meal. Or, make a seafood rice dish and add some shrimp.
This also tastes really good on top of lettuce as a salad. The options really are endless.
Cauliflower With Avocado
Who knew that cauliflower and avocado went so well together? I didn’t until I tried it!
This recipe can be served cold or warm. The cauliflower rice without the avocado is perfect for meal prep. Just skip the step where it tells you to add the mashed avocados to the skillet.
Without the avocados, this still tastes incredible.
If you add the avocado, don’t try to store it. The avocado will turn brown. It might last one day without turning brown since it has lime juice, and lime juice prevents avocados from browning.
This rice side dish (without the avocado) will stay fresh in the refrigerator for up to 3 days.
Low-Carb Riced Cauliflower Side Dishes
I am a huge fan of Chipotle! When they started to serve cauliflower rice, I knew I had to try and make a copycat version at home. I think I did it! This recipe tastes just like theirs. I added feta cheese and avocado to mine and I think it tastes even better now.
I also love how simple this is to make. All you need is a skillet and to heat up the ingredients. When you use frozen cauliflower rice, you have almost no prep time. It’s one of those recipes that I can make on busy days.
Low-Carb Toppings
This simple recipe is easy to customize. Just add any of your favorite toppings.
My favorite keto-friendly toppings are:
- Hot Sauce
- Bacon
- Jalapeno
- Shredded Cheese
The cilantro is completely optional. If you don’t like the taste of cilantro, you can leave it out.
Remember, fresh ingredients taste better. Use minced garlic instead of garlic powder and fresh lime juice will taste so much better than jarred lime juice.

INSTRUCTIONS:

2. Stir in cauliflower rice. Continue to saute until rice is fully cooked.
3. In a separate bowl, mash avocados. Stir in lime juice and fresh cilantro.
4. Add the avocado mash to the cauliflower rice skillet. Stir well.
5. Garnish with crumbled feta.
