Creamy Keto Tuscan Salmon

Ingredients

  • 4 Salmon Fillets 5-6 ounces each
  • 2 tbsp Olive Oil
  • 3 tbsp Butter
  • 3 tsp Minced Garlic
  • 1/2 Onion chopped
  • 1/3 cup White Cooking Wine
  • 1 1/4 cup Heavy Whipping Cream
  • 3 cups Fresh Spinach
  • 1/4 cup Sun Dried Tomatoes chopped
  • 1/2 tsp Dried Basil
  • 1/3 cup Parmesan Cheese grated
  • 1/3 cup Bacon Pieces

Instructions

  • Season the salmon with salt and pepper to taste.
  • Place the oil in a skillet over medium high heat.
  • Sear the salmon for 5 minutes on each side, and remove from the skillet. Drain the excess oil.
  • Reduce the heat to medium, and melt the butter in the skillet.
  • Stir in the onions, and saute until softened.
  • Mix in the garlic, and saute another 30 seconds.
  • Pour in the white cooking wine, and simmer until the liquid is reduced by half.
  • Place the sun dried tomatoes into the skillet, and stir to combine.
  • Add the heavy whipping cream, salt and pepper to taste and the basil. Simmer until the sauce has thickened.
  • Stir in the Parmesan cheese, bacon and spinach, and simmer until the spinach has wilted.
  • Return the salmon to the skillet, and toss to coat in the sauce.
  • Serve with additional bacon pieces for garnish.
