Cajun Chicken Strips
1poundBoneless Skinless Chicken Tenderloins
1largeEgg
1 1/2cupsCrushed Pork Rind Crumbs
1/4cupParmesan Cheesegrated
1 1/2tspCajun Seasoning
Cajun Dipping Sauce
1cupGreek Yogurt
1tspPaprika
1tbspParsleyFinely chopped
1 1/2tbspDijon Mustard
1tspHot Sauce
1/4tspGarlic Powder
1/4tspCajun Seasoning
Instructions
Preheat the air fryer to 350 degrees.
Beat the egg in a shallow bowl.
Mix together the pork rind crumbs, parmesan cheese, 1 ½ tsp. Cajun seasoning and salt and pepper to taste in a separate shallow bowl.
Dip the chicken tenderloins into the egg, and then coat in the pork rind crumb mixture.
Place on a rack in the air fryer for 10-12 minutes.
Raise the temperature to 400 degrees and cook for another 4-5 minutes until crispy and browned.
Mix together all of the ingredients for the dipping sauce in a bowl, and serve.
