Dill Chicken Salad Pickle Boats

Ingredients

  • 12 Dill Pickles whole
  • 12 ounces Canned Chicken drained
  • 1 Celery Stalk chopped
  • 1 Green Onion chopped
  • 1/4 cup Mayo
  • 1 tbsp Low carb sweet relish
  • 2 tsp Dijon Mustard
  • 1 1/2 tbsp Fresh Dil
  • 1 tbsp Lemon Juice

Instructions

  • Open and drain the canned chicken.
  • In a bowl, stir together chicken, mayo, relish and dijon mustard.
  • Add celery, onion, fresh dill and lemon juice. Mix well. Set aside.
  • Slice the pickles in half lengthwise. Carefully scoop out the center of the pickle to create a boat.
  • Spoon desired amount of the chicken salad into each of the pickle boats.
  • Garnish with additional fresh dill, if desired.

Notes

*Instead of mayonnaise, you can use plain Greek yogurt.
