Ingredients

  • 1 Zucchini chopped
  • 1 Yellow Squash chopped
  • 1 tbsp Olive Oil
  • 1 tbsp Butter
  • 1/2 tsp Minced Garlic

Garnish

  • Fresh Parsley
  • Parmesan Cheese

Instructions

  • Cut zucchini and yellow squash into quarters.
  • In a large skillet, begin to heat olive oil.
  • Add chopped zucchini and squash. Cook for approximately 3 minutes before turning. If you turn too often, you will not get crispy brown pieces.
  • Cook until zucchini and squash are tender and all sides are slightly browned.
  • Add butter, garlic, salt and pepper.
  • Continue to cook until butter is melted and garlic is aromatic; approximately another 1-2 minutes.
  • Remove and garnish with parsley and parmesan cheese.
