Low-Carb Zucchini Side Dish
When you need a really easy recipe, use this. It’s one of my favorites because it takes so little thought and always turns out delicious.
This is one of my go-to ways to prepare and serve zucchini and yellow squash. I’m so used to making it that I had to slow down and really think about it in order to get the measurements to share with you.
That’s the beauty of this recipe! After you make it a few times, you’ll be able to whip it up without the recipe, making personal alterations as you go.
Low-Carb Zucchini Recipe With Squash
Zucchini and squash are both fantastically low in carbs and affordable vegetables too. This is a healthy and budget-friendly side dish to serve your family during a big holiday meal.
Everyone needs that one recipe they can make without having to think about it. Something they can make during the chaos and business of holiday parties. That’s this recipe.
Since it is so simple, people of all diets and ways of eating will enjoy it. It’s made with just spices, vegetables, oil, and butter. The only adjustment you might have to make is if someone is on Whole30. If so, they can’t eat butter because it is technically dairy. Instead of butter, use ghee. It’s clarified, Whole30 compliant, and tastes the same as butter.
Keto Vegetable Side Dish
This side dish tastes the best when it is fresh and hot, right off of the stove. I do not recommend storing it. If you do, it will stay fresh for a maximum of 3 days, but the quality will diminish. It becomes soggier and softer in the refrigerator, the longer you keep it.
Since this is so basic, there are lots of ways you can change it up. Add some strips of your favorite peppers or saute it with your favorite type of onion. Mushrooms or carrots will also taste deliciously mixed in.
Don’t forget the garnish – that’s what really enhances it! I added fresh parsley at the end and sprinkled it with grated parmesan cheese. Instead of parmesan, grate some asiago cheese – it has a bolder bite!
Sauteed Zucchini and Squash Recipe
There are a few things you can do to make sure that your zucchini and yellow squash comes out crispy instead of soft and soggy. The most important thing is to let the zucchini and squash rest in the frying pan without moving them for about 3 minutes.
This will give them the crispy coating that we all love.
Next, make sure you are using enough olive oil. I used a tablespoon, which was enough for one zucchini and one squash. If you use more vegetables, add more olive oil.
Finally, don’t forget to add butter with the garlic. The butter gives the vegetables more flavor and helps them get even crispier.
Best Seasoning For Zucchini
You don’t have to use very many spices in this recipe. I just used salt, pepper, and fresh garlic. Then, I topped it with some fresh parsley.
Sometimes I like to season zucchini with oregano and basil. Instead of garlic, sprinkle some “everything but the bagel” seasoning. It has a wonderfully nutty and salty taste that goes perfectly with zucchini.
Low-Carb Garlic Butter Zucchini and Yellow Squash Recipe

Zucchini
Yellow squash
Olive oil
Butter
Minced garlic
Salt & pepper
Garnish: fresh parsley & parmesan cheese, if desired
INSTRUCTIONS:
1. Cut zucchini & yellow squash into quarters.
2. In a large skillet, begin to heat olive oil.
3. Add chopped zucchini & squash. Cook for approximately 3 minutes before turning. If you turn too often, you will not get crispy brown pieces.
4. Cook until zucchini & squash are tender and all sides are slightly browned.
5. Add butter, garlic, salt & pepper.
6. Continue to cook until butter is melted and garlic is aromatic; approximately another 1-2 minutes.
7. Remove and garnish with parsley & parmesan cheese.
