Easy Lemon Rice

This flavorful red pepper & lemon rice is a delicious side that that’s easily made in under 20 minutes!

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil or avocado oil
  • 3 garlic cloves minced
  • 2 tbsp  red pepper (optional) optional
  • 1 tsp  lemon zest
  • 1 cup long grain rice
  • 1/4 tsp  turmeric powder
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1 cup milk
  • 3 tbsp lemon juice
  • lemon juice

Instructions

  • In a pan melt butter and olive oil.
  • Stir in zest, red pepper and garlic. Stir until soft.
  • Now add rice.
  • Season rice with numeric, salt and pepper.
  • Cook for 1-2 minutes.
  • Add broth, milk and lemon juice.
  • Bring rice to a boil.
  • Reduce heat to simmer and cover pan.
  • Simmer until liquid has evaporated (about 15-20 minutes)
  • Remove pan from heat.
  • Taste and adjust seasoning.
  • Garnish with dill.
