1 yellow onion 2 tsp ground cumin 3 tsp chili powder 1 tsp oregano 14 oz can crushed tomatoes 1 can rotel tomatoes 1 can black beans 1 cup frozen corn 2 chicken breasts 4 cups reduced-sodium chicken broth Toppings 1 package tortilla strips (found in the salad toppings aisle) ¼ cup cilantro (optional) 1 avocado (optional)
Dice the yellow onion. Cook in a small pan on medium high heat until soft.
Add the onions and all other ingredients (except for toppings) to slow cooker.
Cook on high for 4 hours, stirring occasionally
Shred chicken into bite-sized pieces and add back into the soup.
Stir well.
Serve & top with optional tortilla strips, cilantro, and avocado.
